Angela Nicolettou has created a salad that combines the flavours of summer fruits and veggies. Haloumi brings protein and creaminess to balance the exuberance of the fruit. Try it!


Summer salad with grapes and haloumi

Ingredients

3 zucchinis

1 clove garlic

1 cup red grapes

1 haloumi, cut into slices

Small bunch of mint, chopped

¼ cup extra virgin olive oil

1 tbs lemon juice

Lemon zest           

Method

Slice the zucchini lengthwise using a mandolin or vegetable peeler. Place in a bowl and sprinkle with salt. Let rest for an hour before squeezing the zucchini well to remove all liquid.

Crush the garlic into a small bowl and add 1 tbs lemon juice and a sprinkle of salt. Let the garlic marinate while you prepare the rest of the salad.

Cut haloumi into thick slices and pat dry. Heat a frypan or grill.  Drizzle haloumi with olive oil and fry/grill until just coloured. Remove from pan and cut into bite-sized pieces.

Add the grapes to the hot pan/grill with a little extra drizzle of olive oil and cook until just coloured. Remove from pan.
