This air-fryer salmon with sweet potato fries is the ideal solution for nights when you’re too tired to cook. Ready in just 20 minutes, this one ‘pan’ meal is a real winner.

Ingredients

  • 2 x 180 g salmon fillets
  • Mixed salad, to serve (optional)
For the fries
  • 1 medium sweet potato
  • 2 tsp olive oil
  • ½ tsp salt
  • ¼ tsp sweet paprika
For the sauce
  • ½ cup mayonnaise
  • 2 tsp lemon juice
  • 2 tsp Dijon mustard
  • 2 tsp finely chopped chives

Instructions

  1. To make the sweet potato chips, preheat the air fryer to 180˚C. Peel the sweet potatoes and cut into 1 cm-thick chips. Place the sweet potatoes into a large bowl, drizzle with the olive oil and sprinkle with the salt and paprika. Toss well to combine, then arrange in a single layer in the basket of your air fryer. Cook for 10-15 minutes, or until tender and browned, shaking the chips in the basket occasionally to ensure even cooking. Remove to a plate and keep warm.
  2. Place the salmon fillets into the air fryer basket and cook at 180°C for 6-8 minutes, until the salmon is cooked to your liking.
  3. While the salmon is cooking, in a small bowl, combine the ingredients for the sauce and mix well to combine.
  4. Divide the sweet potato fries and salmon fillets between plates. Add a dollop of the lemony chive mayonnaise and serve with mixed salad on the side (if you like).

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
