1. Mandarin hazelnut cake with cream cheese frosting and sugared mandarin peel

The great thing about this recipe is you use whole mandarins, yes skin, pith and all. The result is a wonderfully moist and moreish cake.

2. Orange and almond cake

In this recipe whole oranges are boiled for two hours and then puréed. Not only is this cake incredibly moreish and moist, it is also gluten and dairy-free making it the perfect all-rounder.

The British left this dish behind in Menorca, Spain and it’s now a favourite in households and pastry shops. It’s made with a biscuit base and sweetened condensed milk.

4. Grapefruit and pepper meringue tartlets

Pepper in meringue may sound odd, but the little spicy kick works really well with the acidity of the grapefruit curd. This will be one rewarding dessert to make.

9. Lime mojito pie

With a coconut rum-infused lime curd, this pie is an ode to tropical tastes. It packs a good citrus punch and looks gorgeous.

Serve a scoop of the pudding with a generous dollop of the lavender cream. "The very subtle perfume of lavender is a perfect marriage with the sharpness of lemon” says recipe author Poh Ling Yeow.
