Steamed half-shell scallops with XO sauce and browned butter

Inspired by Ho Lee Fook’s steamed razor clams, Dan cooks these scallops with techniques learnt from executive chef Archan Chan: first steaming the shellfish, then pouring hot oil over aromatics to create an added layer of flavour.

Ingredients

  • 5 scallops on the half-shell
  • 5 tsp XO sauce
  • 1 knob of ginger, julienned
  • 50 g butter
  • 3 spring onions, finely sliced and placed into iced water
  • Coriander leaves, to garnish
Dressing
  • ¼ cup soy sauce
  • ¼ cup water
  • 1 tbsp sugar

Instructions

  1. Top each scallop with a teaspoon of XO sauce and some julienned ginger.
  2. Place the scallops in the steamer basket and steam over high heat for 2-3 minutes, or until just cooked. Remove the scallops and arrange on your serving plate.
  3. Combine soy sauce, water and sugar in a bowl, stirring to dissolve the sugar completely. Spoon the dressing over the scallops and top with the sliced and drained spring onion.
  4. Place the butter in a small fry pan over high heat and melt until it begins to foam and go brown.
  5. Spoon the browned butter over the scallions, then garnish with coriander leaves and serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
