Peach, apple and mint balls

Energy balls are a great snack to have on hand. These are easily made and you can use a variety of dried fruit – instead of apple and peach, try apricots, dates or prunes.

Ingredients

  • Handful of dried apple rings
  • Handful of dried peaches
  • 3-4 tbsp boiling water
  • Pinch dried mint
  • ¾ cup raw, unsalted macadamia nuts
  • 1 tbsp coconut oil
  • 2 tbsp honey
  • ¼ cup desiccated coconut + about 1 cup, lightly toasted, for coating

Instructions

  1. Place the apples, peaches and mint into a bowl and pour over boiling water. Steep for a few minutes.
  2. In the bowl of a mini food processor add the macadamias, coconut oil, honey and a ¼ of cup of desiccated coconut. Blitz until a sticky crumb forms. Add the pineapple mix and the water and blend again until a rough, sticky paste forms.
  3. Take small portions of the mix and roll with your hands to form balls. Coat in the extra coconut and then chill until firm. They will keep in an airtight container in the fridge for several days.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
